Cooking with FOX 7: Avocado Mint Pasta Salad

April Gutierrez with Central Market makes a healthy and fast meal the whole family can enjoy for dinner.

The recipe is as follows:

Ingredients

¾ cup lime juice
2 tsp garlic
1 cup mint
2 large avocado
½  cup olive oil
1 # small shaped pasta (ex: cavatelli, bowtie, orrechiette)
½ cup pecorino romano, shredded

Method

Combine the lime juice, garlic, mint, avocado, and olive oil in a blender. Puree together, adding a little water as needed to blend smoothly. Season with salt and pepper. Set aside. 
Bring a large pot of salted water to a boil. Cook the pasta until it’s al dente. Drain and place in a bowl. Stir in the cheese and add as much of the avocado dressing as desired.
