AUSTIN, Texas (FOX 7 Austin) - Garlic Crusted Shrimp with Chimichurri
- 1 lb large shrimp, peeled & deveined
- 1 Tbsp Adams Reserve Roasted Garlic Rub
- 2 Tbsp olive oil,or other cooking oil
- 1/4 cup flat leaf parsley, stems removed & roughly chopped
- 4 cloves garlic
- 3 Tbsp red wine vinegar
- 2 Tbsp dried oregano
- 2 tsp crushed red pepper
- salt and pepper to taste
- 1/2 cup Ottavio Extra Virgin Olive Oil
- In a food processor or blender, add parsley, red wine vinegar, garlic. oregano, and pepper flakes. Process until smooth. Add salt and pepper to taste. Pour into a bowl and stir in olive oil. Allow to sit at room temperature for 20-30 minutes.
- Heat skillet over medium high heat. Add in 2 Tbsp oil and allow to heat. Season shrimp with Adams Rub. Add shrimp to pan and cook for about 90 seconds per side
- Serve shrimp with chimichurri sauce.
